Spring Rhubarb Sauce
A simple, seasonal favorite using one of Maine’s most recognizable early spring ingredients.
Ingredients
4 cups fresh rhubarb, chopped
1 cup sugar
1/2 cup water
Optional: 1/2 teaspoon cinnamon or a splash of vanilla
Instructions
Combine rhubarb, sugar, and water in a saucepan.
Bring to a boil over medium heat.
Reduce heat and simmer for 10–15 minutes, stirring occasionally.
Cook until the rhubarb breaks down into a soft sauce.
Add cinnamon or vanilla if desired.
Remove from heat and allow to cool before serving.
Serving Ideas
Spoon over yogurt or oatmeal
